Cake Origins: Part 1 'Why Is The Sponge Cake Called Victoria?'

When it comes to cakes we all know there are thousands of variations! Carrot cakes, fruit cakes, sponge cakes, eggless cakes, chocolate cakes... in fact there are too many to mention right now. But these cakes all had to originate from somewhere, and get their name from something!

    America - Red Velvet Cake

Red Velvet is a layered cake that is red in appearance. This deep red colour was originally gained from adding beetroot to the cake mix, and more recently, red food colouring. It is also covered with a layer of cream cheese!

During the second world war when foods were rationed, bakers would use the juice from boiled beets to enhance the colouring of their cakes.

    Denmark - Marble Cake

This interesting cake comes all the way from Denmark! The way the marbled effect is achieved is by lightly blending light and dark batter. These are usually two contrasting coloured flavours, and most popular is chocolate and vanilla!

Other interpretations could include fruits, such as strawberry, and cinnamon cake.

    United Kingdom - Victoria Sponge

The Victoria Sponge is a traditional sponge cake (flour, sugar & eggs) but with added fat to add to the taste. It is also filled with a whipped cream and raspberry jam, with the top being dusted with icing sugar.
This cake was in fact named after Queen Victoria herself! It was well known that she enjoyed a slice of this cake with her afternoon tea!
